For remote interviews, are the teams being interviewed allowed to have an adult that is not the coach/mentor be in the room with them off camera? Could be a parent or maybe a tech person working the camera.

As long as this individual is not influencing the student responses in any way, this is acceptable. Adjusting volume and controlling zoom are acceptable reasons for someone to be behind the computer rather than in front of the camera.
As a reminder, the team still needs a designated responsible adult on camera for the duration of the interview at all times.
